  • 8 oz Italian sausage, casings removed
  • 4 cups cubed day-old bread (about 1-inch pieces)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 2 cups milk
  • 4 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  • Preparation: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Cook Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it up with a spoon, and cook until browned. Remove sausage and set aside.
  • Sauté Vegetables: In the same skillet, add onion and garlic; cook until softened. Add cherry tomatoes and cook for another 2 minutes. Set aside.
  • Assemble Bread Pudding: In a large bowl, combine the bread cubes, cooked sausage, sautéed vegetables, and cheddar cheese. Transfer to the prepared baking dish.
  • Prepare Custard: In another bowl, whisk together the milk, eggs, Parmesan cheese, oregano, salt, and pepper. Pour this mixture evenly over the bread mixture in the baking dish.
  • Bake: Press the bread down gently to help it absorb the custard mixture. Let it sit for 10 minutes. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set.
