Ingredients

  • 2 cups rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/2 cup dried fruits (raisins, cranberries, or apricots)
  • 1/4 cup chocolate chips (optional)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a large bowl, mix the rolled oats, chopped nuts, dried fruits, and salt.
  • In a small saucepan, melt the almond butter, coconut oil, and honey over medium heat, stirring until smooth.
  • Remove from heat and stir in the vanilla extract.
  • Pour the wet mixture over the dry ingredients and mix well to combine.
  • Press the mixture firmly into the prepared baking pan, ensuring it's evenly distributed.
  • Bake for 20-25 minutes, or until the edges are golden brown.
  • Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang.
  • Cut into 12 bars and enjoy!

Notes

  • For a vegan option, use maple syrup instead of honey.
  • Customize your bars with different mix-ins like seeds, coconut flakes, or spices.
  • Store the granola bars in an airtight container for up to a week or freeze for longer storage.
