Ingredients
- 2 to 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 cup sugar (can reduce to 3/4 cup)
- 1 egg, beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Instructions
- Preparation: Preheat your oven to 350°F (175°C). Butter a 4x8 inch loaf pan.
- Mix Wet Ingredients: In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
- Combine Ingredients: Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
- Bake: Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a tester inserted into the center comes out clean. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

For extra flavor and texture, consider adding a handful of chopped nuts or chocolate chips to the batter. This banana bread keeps well for several days when wrapped in plastic wrap or stored in an airtight container. You can also freeze banana bread for up to three months.
